Empower Potato Leek Lentil Chicken Soup

Instructions

  1. Sauté olive oil, leeks, crushed garlic, diced potatoes, and carrots in a large pot until fragrant and slightly softened.
  2. Add lentils and cook for 10 minutes, stirring occasionally.
  3. Pour in broth and simmer for 25 minutes, or until the lentils and vegetables are tender.
  4. Blend the soup with an immersion blender to your desired consistency.
  5. Add spinach, diced chicken, and rice.
  6. Simmer gently until the chicken is fully cooked and the spinach is wilted.
  7. Stir regularly to prevent the rice from sticking to the bottom.
