I love sweet potato hash. It is nice to change up the flavors. My husband said it is “delicious”. If I were making this for me, I would use 8 cups of kale, my family prefers less. If you can’t find white sweet potato, use 2 regular.

Instructions
- Microwave diced sweet potato for 2-3 minutes, to soften. You can skip this, and saute potatoes longer.
- Heat avocado oil in large sauce pan over medium heat. Add diced onion and saute for 3 minutes, until translucent.
- Add sweet potato, stirring occasionally until nicely browned. About 8-10 minutes.
- Add maple syrup and coat onion and potato mixture. Add chipotle chili powder and stir. Cook for 1 minute.
- Slowly mix in chopped kale, until wilted.
- Serve warm.
