This dish is very flavorful. You can serve it with a healthy naan or cauliflower rice. This recipe is simple easy.

- Puree ginger, 1 tsp. garam masala, tumeric, garlic and 3 Tbsp. water in a food processor; set paste aside.
- Heat ghee in a large pot over medium high heat. Add coriander, cumin, cardamon, chiles, and cinnamon,. Cook until fragrant, about 1 minute. Add onions, cook until lightly browned, about 8 minutes. Add reserved paste. Cook for 3 minutes. Add tomatoes. cook until slightly reduced, about 4 minutes. Add tamarind and chickpeas. Boil. Reduce heat to medium-low, cook until liquid is reduced about 1/4, about 45 minutes. Add remaining garam masala, juice, and salt (1/2-1 tsp.).
- Garnish with cilantro (and hot sauce, if desired).
