Ayla KavanaghCarne Asada Burrito Bowl – Make it Veg and leave out the beef
An easy Mexican dinner. One bowl, add chopped spinach if you want some greens…. You also skip the bowl and just make the steak or vice versa.

- Process all marinade ingredients in a food processor. Marinate steak for Carne Asada, 2-4 hours.
- When ready, prepare grill. grill steak for 4 -5minutes per side, medium high heat. Medium rare is best, as it is a thin steak. But of course, cook it the way you like.
- For the Burrito Bowl:
- Thaw and squeeze out excess water from cauliflower rice. You can do this in a mesh strainer.
- Heat 1 Tbsp. EVOO in sauce pan. Saute peppers, onion, and garlic, over medium heat, until translucent. Add cumin and saute until fragrant, about 1 minute. Stir in black beans and enchilada sauce. Stir in cilantro.
- Serve on a platter with Steak or divide among 4 bowls.
