Ayla KavanaghCurried Cauliflower with Cilantro Mint Sauce with (Pita)
I had a group of people over and doubled this! People loved it. The sauce is really good. High in fiber and protein:)
You could serve it over a bed of greens.
Serve with pita or you could get some almond or cassava flour wraps from trader joes.

Instructions
- Place a grill basket on the grill. Preheat to medium high. You could also preheat oven to 450 and do this in the oven.
- Combine cilantro, mint, scallion greens, 2 Tbsp oil, lime juice, water, and 1/2 tsp. salt in mini food processor. Process until smooth. Set aside.
- Combine the cauliflower, curry powder, turmeric and remaining oil and 1/4 tsp. salt in a large owl. transfer the mixture to the grill basket (or oven). Cook, stirring occasionally, until cauliflower is tender, about 10 minutes.
- Meanwhile, mash 3/4 cup chickpeas and 2 Tbsp. of reserved cilantro sauce in a medium bowl until almost smooth. Stir yogurt into remaining sauce.
- Return cauliflower to the large bowl and stir in remaining 3/4 chickpeas and scallion whites.
- If using pita, spread the inside of pita with mashed chick peas, add 3/4 cup cauliflower mixture. Wrap in aluminum foil and heat for 3-4 minutes.
- Without pita, mix all ingredients together in large bowl and divide in 4 equal portions.
