Empower Buffalo Snacks

This is a little something I make for the hubby when we are both working from home! I recommend pairing it with the Spicy Cauliflower Rice. It can be made in one pan for a fast delicious lunch. I also like keeping the Empower Buffalo Snacks in the batter in the fridge for a fast easy meal.
Ingredients
- 2 eggs
- 1/2 Cup Frank’s Red Hot Sauce
- 1 Cup Tapioca Flour
- 2 Tsp Turmeric
- 1 Tsp Black Pepper
- 1 Tsp Garlic Powder
- 4 Breast of chicken
- 2 Tbsp Avocado Oil
Instructions
- Heat oil on medium/low heat. Wait until the oil sizzles.
- Whisk eggs, tapioca flour, Frank’s Red Hot Sauce, and seasonings.
- Cut chicken in 1/8 size pieces.
- Place chicken in egg mixture until each piece is covered.
- Add chicken to hot oil! This is is very important, because if the oil is not hot the batter won’t stay on the chicken.
- Brown the pieces until the chicken is cooked all the way through. You can heat in the oven to keep warm and finish cooking the chicken.
