Every greek child has the same memory of walking into a family member’s house, and seeing a plate of fresh Keftedes. The fresh ones did not have sauce and never made it to the table. They were devoured on the kitchen counter. The kitchen was everyone’s favorite place, and these meatballs were the best bribe.

- Heat the oil on medium heat until it is sizzling hot.
- Mix all the ingredients except the oil and tapioca flour
- Scoop out meatballs with a tbsp.
- Roll the meatballs and roll them in tapioca flour.
- Place all the meatballs in pan and brown.
- If you really want to be a legit Yai Yai you should serve them right off the pan and burn some zealous grandchildren.
- After they have browned pour out most of the oil and add the sauce ingredients. Cook on medium low for 30-40 minutes.
