This is the perfect healing soup for anyone recovering from a cold or injury. It is a savory combination of turmeric, sweet curry, and vegetables.
Ingredients
Instructions
- Use a large dutch oven or cast iron pot to heat butter on medium high heat
- Add vegetables, garlic, ginger, salt and pepper
- Make sure the squash is softer but not mushy
- Add remaining seasonings
- Add broth and cook for 40 to 60 minutes until all vegetables are soft
- Use an emergent blender
- Add coconut milk and more seasonings to taste
- simmer for 15 minutes
