Roasted Zucchini

Who doesn’t love fresh zucchini? This is an easy weeknight dish that serves as an appetizer or side dish. You can easily double or triple.

Instructions

  1. Preheat oven to 375.  Prepare a baking sheet with parchment paper or silicone mat.
  2. Slice zucchini 1/4 inch thick and place in a large bowl. 
  3. Add avocado oil, garlic powder and kosher salt. Toss.
  4. Place zucchini on baking sheet in a single layer.  Cook for 20 minutes.  
  5. Remove from oven and sprinkle zucchini with nutritional yeast.  Turn oven to broil and place zucchini back in middle rack of oven, for 2-3 minutes.  Keep an eye on it.  
  6. Serve.
