Who doesn’t love fresh zucchini? This is an easy weeknight dish that serves as an appetizer or side dish. You can easily double or triple.

Instructions
- Preheat oven to 375. Prepare a baking sheet with parchment paper or silicone mat.
- Slice zucchini 1/4 inch thick and place in a large bowl.
- Add avocado oil, garlic powder and kosher salt. Toss.
- Place zucchini on baking sheet in a single layer. Cook for 20 minutes.
- Remove from oven and sprinkle zucchini with nutritional yeast. Turn oven to broil and place zucchini back in middle rack of oven, for 2-3 minutes. Keep an eye on it.
- Serve.
