St. Lucian Spinach Soup

This was a delicious surprise during a visit to St. Lucia

Ingredients

Instructions

  1. Preheat oven to 375 degrees
  2. Split pumpkin in half and remove seeds
  3. Bake in oven for 30 minutes until it is soft enough to peel and cut up pumpkin
  4. saute olive oil, onion, garlic, cut up pumpkin with seasonings
  5. Add vegetable stock
  6. Simmer for 30 minutes
  7. Add spinach
  8. Simmer for 20 minutes
  9. Puree soup
  10. Add sugar and coconut cream
  11. Add salt for taste
