Instructions
- Preheat oven to 375 degrees
- Split pumpkin in half and remove seeds
- Bake in oven for 30 minutes until it is soft enough to peel and cut up pumpkin
- saute olive oil, onion, garlic, cut up pumpkin with seasonings
- Add vegetable stock
- Simmer for 30 minutes
- Add spinach
- Simmer for 20 minutes
- Puree soup
- Add sugar and coconut cream
- Add salt for taste
