Ingredients

- 1 packet Dry Activated Yeast
- 1/4 cup Coconut Sugar
- 1 1/4 cup warm water (Test it with your hand under the faucet. Water should feel warmer than you skin, but not unbearably hot)
- 1/3 cup EVOO
- 2 1/2 cups Tapioca Flour (may need more)
- 1 1/4 cups Almond flour (may need more)
- 3 eggs
- 1 1/2 tsp. Salt
- 1 tbsp. Garlic (optional)
Toppings
- 1 jar Organic Pizza Sauce
- 1 log Fresh Mozzarella Cheese or Cheese Alternative (check with us about the ingredients)
- Other topping suggestions:
- Vegetables
- Grilled Chicken
- Tomatoes
Instructions
Pizza Dough
- Mix coconut sugar and yeast in a medium sized bowl.
- Add warm water and mix.
- Allow to rise about 20 minutes, until doubled in size.
- Mix together all flours in a food processor, pulsing until thoroughly blended. Add in olive oil and salt and mix.
- Add in yeast mixture to flour mix, pulsing until combined.
- Mix in 3 eggs until combined .
- Texture should resemble thick cake batter. If it’s too runny, add more tapioca and almond flour and blend. If dough is too thick, add a little more olive oil or water.
- Dump mix into large olive oil lined bowl and let rise for 60-90 minutes. It should rise a little, but won’t double like standard bread.
Putting Pizza Together
- Preheat oven to 425 degrees farenheit.
- When pizza dough has risen, thoroughly oil pizza pan.
- Dump pizza dough onto a well tapioca floured surface.
- Roll or knead out dough with the heel of your hand into a flat circle, smoothing the edges.
- Transfer dough to pan.
- Apply a generous amount of sauce to pizza.
- Thinly slice mozzarella and lay out on pizza. Add any other toppings you want.
- Cook in preheated oven for 15 – 20 minutes. Pizza crust will be crisp on the edges but you’ll still be able to press into it.
- Slice into 8 slices and enjoy!
