Ingredients

  • 1 packet Dry Activated Yeast
  • 1/4 cup Coconut Sugar
  • 1 1/4 cup warm water (Test it with your hand under the faucet. Water should feel warmer than you skin, but not unbearably hot)
  • 1/3 cup EVOO
  • 2 1/2 cups Tapioca Flour (may need more)
  • 1 1/4 cups Almond flour (may need more)
  • 3 eggs
  • 1 1/2 tsp. Salt
  • 1 tbsp. Garlic (optional)
Toppings
  • 1 jar Organic Pizza Sauce 
  • 1 log Fresh Mozzarella Cheese or Cheese Alternative (check with us about the ingredients)
  • Other topping suggestions:
  • Vegetables
  • Grilled Chicken
  • Tomatoes

Instructions

Pizza Dough
  1. Mix coconut sugar and yeast in a medium sized bowl.
  2. Add warm water and mix.
  3. Allow to rise about 20 minutes, until doubled in size.
  4. Mix together all flours in a food processor, pulsing until thoroughly blended. Add in olive oil and salt and mix.
  5. Add in yeast mixture to flour mix, pulsing until combined.
  6. Mix in 3 eggs until combined .
  7. Texture should resemble thick cake batter. If it’s too runny, add more tapioca and almond flour and blend. If dough is too thick, add a little more olive oil or water.
  8. Dump mix into large olive oil lined bowl and let rise for 60-90 minutes. It should rise a little, but won’t double like standard bread.
Putting Pizza Together
  1. Preheat oven to 425 degrees farenheit.
  2. When pizza dough has risen, thoroughly oil pizza pan.
  3. Dump pizza dough onto a well tapioca floured surface.
  4. Roll or knead out dough with the heel of your hand into a flat circle, smoothing the edges.
  5. Transfer dough to pan.
  6. Apply a generous amount of sauce to pizza.
  7. Thinly slice mozzarella and lay out on pizza. Add any other toppings you want.
  8. Cook in preheated oven for 15 – 20 minutes. Pizza crust will be crisp on the edges but you’ll still be able to press into it.
  9. Slice into 8 slices and enjoy!
