I was inspired on a solo trip to visit my daughter in Philadelphia. After a long run, I discovered a local tavern. I remember being very sore from the run, and the wings seemed to heal my legs. It turned out to be a great day walking around the city. I modified the recipe for my AIP diet because of a serious psoriasis flare-up. The recipe did not clear up my skin, but this recipe became a family favorite. I like to cook them on the grill! It keeps the kitchen clean.
If you don’t want to follow the AIP Protocol, I recommend spicing it up!
Ingredients

- 1 Cup of Tapioca Flour
- 2 Tsp Tumeric
- 1 Tsp Garlic Powder
- 2 T Duck fat
- 2 T Avocado Oil
- 20 Wings
Instructions
Oven Cooking
- Preheat oven to 450 degrees
- Coat wings in a large bowl. Make sure they are completely covered with tapioca flour mixture.
- Heat oil on a cast-iron skillet on medium heat.
- Brown wings
- Finish baking in the oven for 20 minutes
Grill Cooking
- Turn on all burners on the outdoor grill.
- Coat wings in a large bowl. Make sure they are completely covered with tapioca flour mixture.
- Heat oil on a cast-iron skillet on the grill
- Brown wings
- Cover grill and watch carefully. They will cook fast!
