  1. Heat oil on medium/low heat. Wait until the oil sizzles. I like using a cast iron skillet over the grill.
  2. Whisk eggs, tapioca flour, Frank’s Red Hot Sauce, and seasonings.
  3. Place chicken in egg mixture until each piece is covered.
  4. Add chicken to hot oil! This is is very important, because if the oil is not hot the batter won’t stay on the chicken.
  5. Brown the pieces until the chicken is cooked all the way through. You can heat in the oven to keep warm and finish cooking the chicken.
