- Heat oil on medium/low heat. Wait until the oil sizzles. I like using a cast iron skillet over the grill.
- Whisk eggs, tapioca flour, Frank’s Red Hot Sauce, and seasonings.
- Place chicken in egg mixture until each piece is covered.
- Add chicken to hot oil! This is is very important, because if the oil is not hot the batter won’t stay on the chicken.
- Brown the pieces until the chicken is cooked all the way through. You can heat in the oven to keep warm and finish cooking the chicken.
