This salad is good leftover. I added grilled chicken to mine. You can play around with the ingredients. I used roasted beets from the produce section of the supermarket. Great to keep on hand in your fridge.

Instructions
- Toss salad ingredients together.
- Make dressing. Stir vinegar, oil and dijon until emulsified. Dress. Season with salt and pepper to taste.
- Add protein if using.
