Beet and Spinach Salad with Tomatoes

This salad is good leftover. I added grilled chicken to mine. You can play around with the ingredients. I used roasted beets from the produce section of the supermarket. Great to keep on hand in your fridge.

Instructions

  1. Toss salad ingredients together.
  2. Make dressing. Stir vinegar, oil and dijon until emulsified. Dress. Season with salt and pepper to taste.
  3. Add protein if using.
