Breakfast for Dinner – Paleo Hash – Vegetarian

You could add 1 lb. chicken sausage instead of the black beans if you are would like a sausage hash. I would remove casings on sausage or use Aidel’s. Breakfast for Dinner

Ingredients

Instructions

  1. Microwave diced sweet potato to soften for 2 minutes.
  2. Heat 1 Tbsp. avocado oil or ghee in large skillet over medium heat.
  3. Add sweet potato and cook for about 10 minutes, stirring occasionally. Add in veggie broth and spices.  Cook for an additional 10 minutes, adding more broth if desired.  Stir in spinach, cook for about 1 minute.  Add black beans and cook until heated through.
  4. When ready to eat, heat 1/2 Tbsp. ghee or avocado oil and fry up your eggs.  Garnish with cilantro, and avocado, if desired.
