Ingredients

  • 4 chicken breast
  • 2 tbsp olive oil
  • 1 cup tapioca flour
  • 2 eggs
  • 2 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp pepper
  • 1 tsp salt

Instructions

  1. Heat olive oil over medium heat
  2. Fillet each chicken breast
  3. Cut chicken into “Chicken Fingers”
  4. Mix dry ingredients with seasonings in a bowl
  5. Dredge chicken pieces in dry ingredients bowl
  6. Mix eggs with1 tbsp of water
  7. Dredge chicken pieces in egg mixture
  8. Dredge chicken in dry ingredients bowl(again)
  9. Brown chicken pieces in olive oil
  10. Cook until pieces are golden brown and cooked all the way through. (Heat should be lowered to 3-5)
