Creole Sauce

Goes well with Jambalaya. Would be great with eggs or create a meat sauce. I used coconut sugar instead of regular sugar.

  1. Melt Ghee over medium heat in a medium sauce pan.  Stir in tomatoes, onion, celery and bell pepper. Add seasoning mix and garlic. (3 minutes).   Saute until the onions are transparent, about 5 minutes, stirring occasionally.  Stir in the stock, tomato sauce, sugar, and Tabasco.  Bring to a boil.  Reduce heat to maintain a simmer and cook until vegetables are tender and flavors are married, about 20 minutes, stirring occasionally.  Remove Bay leaves before serving.
