Another very fast dinner. I love these for those long days running around, but I want a cozy feel for the house. The smells of this chicken will decrease the regular 4pm bewitching hour. Also, I like to save the chicken breast for chicken salad the next day.

Ingredients

  • whole chicken (5lbs)
  • 1 tbsp ghee
  • 1 tsp olive oil 
  • 1 white sweet potato
  • 1 sweet potato
  • 1 onion (medium)
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp dill

Instructions

  1. Preheat oven 350
  2. Heat the olive oil in a dutch oven. Brown potatoes and onions.
  3. Cover chicken with ghee, salt, pepper, and 1/2 the oregano.
  4. Move vegetables to the side and brown the top of the chicken(3-5 minutes)
  5. Increase oven to 400
  6. Flip chicken over and place in oven until the chicken is browned
  7. When the chicken is browned cover and cook until the temperature is 160 degrees.
  8. Average roasting time is 20 – 30 minutes per pound .
