You can use any combination of veggies that you like. Omit the bacon and make it vegetarian.
These are great for breakfast, a quick snack on the go, or even lunch.

- Heat oven to 350. Grease a muffin pan, with avocado oil spray.
- Crack 12 eggs in a large bowl. Add seasoning and whisk together
- Dice peppers. Chop bacon. Chop spinach. Distribute muffin tins evenly with veggies and bacon.
- Fill muffin tins with eggs. About 1/3 cup per muffin tin. Sprinkle with nutritional yeast, if using.
- Bake 20-25 minutes.
- Loosen muffins from tins and enjoy. These can also be frozen for up to 2 months.
