I am a huge fan of monster cookies. Peanut better, oatmeal and chocolate – oh my! I have reduced the coconut sugar a bit on this recipe. You can substitute nuts or raisins for the m&m’s.

- Heat oven to 350. Prepare baking sheets with parchment paper.
- Mix ghee, peanut butter, coconut sugar together with electric mixer. Add in eggs, one at a time. Add vanilla.
- Mix in oatmeal, baking soda and cinnamon.
- Add chocolate chips, m &m’s, and coconut. Use a large scoop to form dough into round balls. If you like flatten cookies, gently press them down with your hand. You can add a few extra m & m’s for aesthetics and flavor on the top, if you’d like.
- Bake for 10-13 minutes. Cool on baking sheet for 5 minutes.
- These taste best cooled. I put mine in the freezer and pull them out as I want them.
