French Lentil Vegetable Stew

This was a fast way to use up all the vegetables from the farmer’s market. It started as a ratatouille and quickly morphed into stew, because I was too lazy to prepare the French lentils properly. It re-heated well and was a big hit.

Instructions

  1. Saute onions, vegetables, and garlic until 50% of vegetables have been lightly browned
  2. Add sauce, broth, spices, lentils, and basil
  3. Simmer for 40 minutes to 60 minutes until the lentils are cooked.
