  2. Heat avocado oil in pan
  3. Mix tapioca flour with seasonings
  4. Coat eggplant in dry mixture
  5. Dip in eggs 
  6. Coat again in dry mixture
  7. Add to sizzling hot pan
  8. Brown each side
