Green Thai Curry with Tofu or Chicken

My sister went CRAZY over this. She had for breakfast the next day. We served it with the cilantro lime cauliflower rice.

Ingredients

Instructions

  1. In a large pot, over medium heat, stir together sweet potato, coconut milk and green curry paste.  Cook for about 15 minutes, until potato is tender when poked with a fork.  
  2. Add in broccoli, and protein of choice.  Cook for another 5 minutes, to heat through and tenderize broccoli.
  3. Serve with cauliflower rice.
