Grilled Herb Shrimp with Cauliflower Rice and Avocado

Ingredients

Instructions

  1. Combine the garlic, onion, parsley, basil, mustards, salt, pepper, olive oil and lemon juice.  Add the shrimp and allow them to marinate for 1 hour at room temperature or cover and marinate overnight.
  2. Prepare a grill to medium heat.  Brush the grill racks with oil to prevent sticking.  Skewer the shrimp.  Grill the shrimp for 2 minutes per side or until cooked through.  
  3. Serve with cauliflower rice and avocado.  
  4. Each serving should be 1/2 cup cauliflower rice and 1/2 avocado.
