Huevos Rancheros

When Nicole ran the New York Marathon, I went as a dutiful husband to support her. Right after dropping her off for the start I made my way to a reservation at one of NY’s hot brunch spots. While Nicole was running, I was enjoying what, at the time, was the best best huevos rancheros of my life. I’ve finally come up with a homemade recipe that I think rivals my experience in NY.
Ingredients
- 1/2 cup homemade Refried Beans (see our recipe)
- 2 eggs
- 1/4 cup medium salsa (White Mountain Gringo is a clean choice)
- 1/3 large Chorizo sausage
- 1/4 Avocado
- Fresh Chopped Cilantro
- Fresh Ground Pepper
Instructions
- If necessary, reheat the refried beans
- Plate the refried beans in the center of the plate, spreading them into a flat circle
- Slice and pan fry the chorizo, moving it to the plate when browned
- Warm the salsa either in a small pan or in the microwave
- Fry 2 eggs in a small amount of butter until the egg whites are cooked and the edges begin to brown
- Plate the fried eggs on top of the refried beans
- Spoon the warmed salsa on top of the eggs
- Top with sliced avocado
- Garnish with the fresh chopped cilantro and ground pepper to taste
