Huevos Rancheros

When Nicole ran the New York Marathon, I went as a dutiful husband to support her. Right after dropping her off for the start I made my way to a reservation at one of NY’s hot brunch spots. While Nicole was running, I was enjoying what, at the time, was the best best huevos rancheros of my life. I’ve finally come up with a homemade recipe that I think rivals my experience in NY.

Ingredients

  • 1/2 cup homemade Refried Beans (see our recipe)
  • 2 eggs
  • 1/4 cup medium salsa (White Mountain Gringo is a clean choice)
  • 1/3 large Chorizo sausage
  • 1/4 Avocado
  • Fresh Chopped Cilantro
  • Fresh Ground Pepper

Instructions

  1. If necessary, reheat the refried beans
  2. Plate the refried beans in the center of the plate, spreading them into a flat circle
  3. Slice and pan fry the chorizo, moving it to the plate when browned
  4. Warm the salsa either in a small pan or in the microwave
  5. Fry 2 eggs in a small amount of butter until the egg whites are cooked and the edges begin to brown
  6. Plate the fried eggs on top of the refried beans
  7. Spoon the warmed salsa on top of the eggs
  8. Top with sliced avocado
  9. Garnish with the fresh chopped cilantro and ground pepper to taste
