Jambalaya with Cauliflower Rice

We loved this! It made a TON! Enjoy. You can freeze, if you want to. You can serve with creole sauce. Fresh spices make a big difference.

Ingredients

Instructions

  1. Combine seasoning mix.  
  2. In large Dutch oven, melt 1 Tbsp. ghee, over medium heat.  Add andouille sausage and chicken, saute, until browned.  Add onions, celery and bell peppers.  Sauce until tender, but still firm.  Stir occasionally.  
  3. Add seasoning mix and saute for a minute or two, stirring frequently.  Make a well in center of ingredients and and garlic.  Cook for 30 seconds.  
  4. Stir in diced tomatoes, chicken broth and shrimp.  Cook through, until shrimp are opaque.  Add cauliflower rice and cook until warm.  
  5. Serve with scallion, parsley and creole sauce.  Optional.  Enjoy!
