Lo-Carb Lo Mein

I found this recipe on Pinterest and added a ton of vegetables and tweaked it a bit to keep it clean. It was great, family approved and still fab for leftovers. I find the HOP pasta absorbs the sauce even more over time – yum! This one is on the rotation.

Marinade
  1. Mix Liquid Aminos, Garlic, Honey, Sesame Oil
  2. and Sriracha in a bowl.  Add 1.25 lbs
  3. thinly Sliced Sirloin Steak. Marinate the steak in the sauce for 30 minutes or as long as overnight.
Lo Mein:
  1. Prepare the noodles according to directions. Boil the noodles for about 10 minutes or until tender but not mushy. Drain and set aside.
  2. Saute the marinated steak in a large frypan with the avocado oil on medium high heat for 3-5 minutes until it begins to carmelize. Reserve the marinade in the bowl for later. Once meat is cooked take it off the burner.
  3. In clean pan saute the vegetables in 1-2 T avocado or other high heat oil until tender:
  4. Pea pods – ~1 cup
  5. Mushrooms – ~1-2 cups sliced
  6. Red peppers – 1 pepper sliced ¼” strips
  7. Scallions/green onions chopped (the white part to saute and the green for garnish)
  8. Next return the pan with the beef to the burner on medium heat and add the drained hearts of palm noodles, the sautéed vegetables and the remaining marinade and continue cooking until most of the sauce has absorbed into the noodles. If the sauce seems dry add an extra tablespoon of aminos and a dash of sesame oil.
  9. Garnish with a green scallions, cilantro and lime wedge.
