Mediterranean Wheat Berry Salad
THIS SALAD IMPROVED OVER A COUPLE OF DAYS… I KEPT ADDING MORE GREENS TO BULK IT UP.You could use quinoa or barley in place of the wheat berries. The wheat berries have a nice texture and nuttiness.I used Sophia’s french feta and I also bought their brined olives.I added cooked chicken breast for additional protein. You could also use tuna fish or a nice grilled fish.

- Make the dressing. Combine the olive oil, lemon juice, garlic and salt and pepper to taste. Shake well.
- Make the salad. Combine the cooked wheat berries, tomatoes, olives, feta and parsley, and chopped spinach in a large bowl. Taste and add salt. ENJOY!
