Mediterranean Wheat Berry Salad

THIS SALAD IMPROVED OVER A COUPLE OF DAYS… I KEPT ADDING MORE GREENS TO BULK IT UP.You could use quinoa or barley in place of the wheat berries. The wheat berries have a nice texture and nuttiness.I used Sophia’s french feta and I also bought their brined olives.I added cooked chicken breast for additional protein. You could also use tuna fish or a nice grilled fish.

  1. Make the dressing. Combine the olive oil, lemon juice, garlic and salt and pepper to taste. Shake well.
  2. Make the salad. Combine the cooked wheat berries, tomatoes, olives, feta and parsley, and chopped spinach in a large bowl. Taste and add salt. ENJOY!
