This is my goto lunch. It is fast and most of the cooking takes time in the oven while I am busy doing other things.

Instructions
- Preheat oven to 350 degrees
- Season chicken with salt and pepper
- Brown chicken in olive oil
- Add vegetables, onion, garlic on top of the chicken
- Place in oven and bake until the vegetables are tender. Placing the vegetables on top of the chicken will keep it moist.
