I never heard of a center cut beef shank until I received it from a local farm. This recipe was the result. It was a big hit with the family. We paired it with roasted potatoes. I made sweet potatoes for myself.

Instructions
- Cut meat into 2 -3 inch pieces
- Cover meat in arrowroot
- Heat butter in Cast iron oval dutch oven
- Brown pieces of meat
- Remove browned pieces add onion, crushed garlic, seasonings, and wine
- Add diced carrots with meat and diced tomatoes
- Simmer for 3 hours (make sure meat is covered with liquid)
