Ossso Buco

I never heard of a center cut beef shank until I received it from a local farm. This recipe was the result. It was a big hit with the family. We paired it with roasted potatoes. I made sweet potatoes for myself.

Instructions

  1. Cut meat into 2 -3 inch pieces
  2. Cover meat in arrowroot
  3. Heat butter in Cast iron oval dutch oven
  4. Brown pieces of meat
  5. Remove browned pieces add onion, crushed garlic, seasonings, and wine
  6. Add diced carrots with meat and diced tomatoes
  7. Simmer for 3 hours (make sure meat is covered with liquid)
