Savory Shrimp Fajitas

This is a quick fajita recipe that comes together quickly on a week night. It is good for the whole family. You can serve with alone, with spinach, tortillas (kids).

Ingredients

Instructions

  1. Mix the spices, sugar and minced garlic together.  Put 1 Tbsp aside.  Add remainder of spice mix and 3 Tbsp. of avocado oil to a medium sized bowl.  Add shrimp and toss.
  2. Heat a large saute pan over medium high heat, add remaining 1 Tbsp. avocado oil.  Add peppers and onions and cook until beginning to brown about 5 minutes.  Remove to a platter.
  3. Add seasoned shrimp to the now empty skillet.  Cook for about 3 minutes per side, until cooked through.  Add peppers, onions and remaining 1 Tbsp. of spice mix to the pan.  Stir. Heat through until warm, over medium heat.  Serve.
