White Bean Turkey Burger

These are simple to make. They are great served in a leaf of Boston lettuce or on a bed of arugula/spinach with your favorite sugar free ketchup (Primal Kitchen) or a nice mustard, I added a few grape tomatoes to mine.

  1. Heat oven to 425.  Line a baking sheet with parchment paper.
  2. Combine the white beans, 2 Tbsp. avocado oil, and the garlic in a large bowl.  Using a fork, lightly smash the beans and mix with the garlic and oil until blended.
  3. Add the red pepper, almond flour, Worcestershire sauce, eggs and chives.  Mix until blended.  Crumble the ground turkey and add it to the bowl along with 1 tsp. salt and 1/2 tsp ground black pepper. Gently mix with a fork or your hands until blended.  
  4. Using hands, moistened with water, form turkey burger patties about 3/4 inch thick.  Place turkey burgers on prepared baking sheet.  Brush light with oil. Bake for 20-25 minutes, until they are firm to the touch and instant read thermometer reads 165 degrees. 
  5. I broil my burgers for a minute or two for desired crispiness on the outside.
