Shrimp “Ceviche”

This is one of my families all time favorite dishes. So easy to make and so yummy. This is great served with tortilla chips or something crispy, if you are indulging. We have also served it over greens.

Ingredients

Instructions

  1. Mix orange juice through garlic into a large sauce pan.  Bring to a boil over high heat.  Add shrimp and cook for 2-3 minutes. Strain shrimp over a large bowl, retaining the citrus sauce.
  2. Cool shrimp and citrus sauce in fridge, separately.  Meanwhile, prepare tomato, onion, jalapeno and cilantro.  Add to cooled citrus mixture, alone with shrimp.  Chill at least 15 minutes.  
  3. To serve:  Place lime juice in a bowl.  Place kosher salt on plate.  Using martini or fun glass, roll rim in lime juice and then in salt, to create a nice rim.  
  4. Add avocado to citrus mixture and shrimp.  Distribute among 4 glasses.  ENJOY!
