Slow Cooker Meatballs and Marinara Sauce

I based the serving size on 3 meatballs, if you make 18. You can play with the size of your meatballs and vary the serving size. You can eat these alone, on spaghetti squash, pasta of your choice, cauliflower rice… Make a meatball sub for your kids:) These were really easy to make. I adapted the recipe from Paleo Running Momma.

  1. Mix all of the meatball ingredients in a large bowl.  I mixed it with my hand.  Do not over mix.
  2. Line a baking sheet with parchment paper. Form 18-20 meatballs.  Broil until brown (about 3 minutes).  Flip and brown the opposite side of the meatball.
  3. Make the sauce:
  4. In a blender or food processor, blend whole tomatoes, tomato paste, garlic, and oregano, until smooth.
  5. Place meatballs in the base of the slow cooker. Top with sauce, can of diced tomatoes and bay leaves.  Cook on low for four hours.
