Spanakorizo

This was a favorite side dish when I visited my MIL. My family became obsessed with these flavors. The healthier version was surprisingly delicious without orzo.

Ingredients

Instructions

  1. sauté onion, spinach, cumin, garlic powder, lemon zest,  salt and pepper
  2. make sure onion in translucent.
  3. add frozen cauliflower, lemon, broth, and dill
  4. Cook down for 20 minutes
  5. Add salt to taste
