I was going to make the Empower Spanakorizo recipe and realized that I had no lemons. I made this version instead. This is also a greek rice version.

- sauté onion, spinach, cumin, garlic powder, salt and pepper
- make sure onion in translucent.
- add frozen cauliflower, tomato sauce, broth, and dill
- Cook down for 20 minutes
- Add salt to taste
