Split Chicken Breast with Tarragon



  1. preheat oven to 400 degrees
  2. wash sweet potatoes cut in 1/2 inch cubes
  3. dice red onion
  4. place vegetables in 9 x 11 baking dish add chicken breasts
  5. drizzle with olive oil and seasonings
  6. make sure chicken is covered with tarragon and vegetables covered with salt, pepper and garlic
  7. place baking dish in the middle of oven
  8. bake for 40 minutes until chicken is reaches 165 degrees
