My husband and I have been experimenting with different recipes, using our smoker. I adapted this one from a Brisket Hash recipe from “Smoke and Spice”. I was thrilled with the flavor. I added a cup of kale to my serving. It was packed with flavor and very satifsfying.

Instructions
- In a heavy skillet, heat the oil and butter over medium heat. Cook the sausage, until slightly browned. Remove the sausage from the skillet, to a serving bowl.
- Add the potatoes, onions, red pepper, and jalapeño to the now empty skillet. Sauce for 10 minutes, or until softened.
- Add the remaining ingredients to the skillet (including the sausage). Cover and simmer. Cook for about 10-15 minutes. Stir the mixture once, after about 7-8 minutes. Uncover the skillet and continue to cook for a few more minutes, until the liquid is evaporated. Serve hot.
