Swordfish kabobs –

This is one of our favorite swordfish dishes. Swordfish is low in fat, and a sturdy white fish. It is not a fish you should eat a lot of, but it is soooooo GOOD. We served it over cauliflower rice.

Instructions

  1. Im a medium bowl whisk the marinade ingredients, including 3 Tbsp. oil. Place the swordfish pieces in a medium bowl.cover with marinade and turn to coat. Marinate for 30 minutes.
  2. Whisk the vinaigrette, including 3 Tbsp oil.
  3. Prepare the grill to medium heat.
  4. Thread swordfish and red peppers alternately, onto the skewers. Discard any remaining marinade. Grill the kabobs over medium heat, with the grill cover closed. Grill for about 6-8 minutes, turning every few minutes. Remove from the grill.  Drizzle the vinaigrette over the swordfish (and cauliflower rice, if using)
