Thai Spicy Noodles

Add your favorite protein to make this a main course. Comes together in minutes. Most of these ingredients, you will have in your cabinet. 2 – 9oz packages of hearts of palm spaghetti REQUIRED I added 1 cup julienned carrots, 2 cups snow peas, 1 pound asparagus, cut into 1 inch – for some reason I can not add it below

Instructions

  1. Process garlic and ginger in a food processor.  Add all ingredients through crushed red pepper.
  2. Prepare veggies ( please see note, in summary), if desired steam for a few minutes.  
  3. Toss together hearts of palm spaghetti and veggies, add sauce.  Chill.
  4. I tossed it all in a pot over low heat and then chilled.  It will look a little watery, this goes away when you chill.  
  5. Garnish with scallions, cilantro and peanuts if desired
