Healthy Banana Chocolate Chip Muffins

Don’t run away from this recipe, because they are healthy. I can not believe these vegan muffins are naturally gluten free. They are absolutely delicious and perfect to eat before a long day of activities. The extra natural carbs aren’t great for weight loss, but these are perfect to keep the family well feed. It is so much better than buying a muffin filled with processed ingredients.
Ingredients
- 3/4 Almond Flour
- 1/4 Tapioca Flour
- 2 tbsp flax seeds
- 6 tbsp water
- 1/4 cup coconut sugar
- 2 eggs
- 2 bananas
- 1/2 almond butter
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees
- Mix 2 flax seed eggs
- 6 tbsp water
- 2 tbsp flax seed
- and leave the refrigerator for 20 minutes
- Mix wet ingredients flax seed eggs. almond butter, vanilla extract, and bananas
- Add remaining ingredients
- Use and ice cream scoop to fill 10 muffin tins
- Bake in oven for 20 minutes
