Don’t run away from this recipe, because they are healthy. I can not believe these vegan muffins are naturally gluten free. They are absolutely delicious and perfect to eat before a long day of activities. The extra natural carbs aren’t great for weight loss, but these are perfect to keep the family well feed. It is so much better than buying a muffin filled with processed ingredients.

Ingredients

  • 3/4 Almond Flour
  • 1/4 Tapioca Flour
  • 2 tbsp flax seeds
  • 6 tbsp water
  • 1/4 cup coconut sugar
  • 2 eggs
  • 2 bananas
  • 1/2 almond butter
  • 1 tsp cinnamon 
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees 
  2. Mix 2 flax seed eggs 
  3. 6 tbsp water
  4. 2 tbsp flax seed 
  5. and leave the refrigerator for 20 minutes
  6. Mix wet ingredients flax seed eggs. almond butter, vanilla extract, and bananas
  7. Add remaining ingredients
  8. Use and ice cream scoop to fill 10 muffin tins
  9. Bake in oven for 20 minutes
