Wing Zingers – Reinvented

This is MY FAVORITE wing recipe. Of course, the original has white sugar in it. I remade it to make it healthier. We usually make these on the grill (omit the tapioca flour). But, it was 2 degrees out and I turned the oven on:)

  1. Preheat oven to 425.
  2. Cut chicken wings into 3 sections, if whole.  Discard tips.  Dry wings.
  3. Set wings aside. 
  4. In a small saucepan, bring honey, buffalo sauce, ghee and vinegar to a boil.  Reduce heat, simmer, uncovered 6-8 minutes.
  5. Mix seasoning and coconut sugar together, in a large ziploc bag.
  6. Toss wings with Tapioca flour. Add wings to the ziploc bag.  Toss to coat.  
  7. Coat a baking sheet with aluminum foil.  Place a cooling rack on pan. Spray with avocado spray.  Place spiced wings cooling rack and bake for 30 minutes.  
  8. Remove wings from oven and toss with Buffalo sauce.  
  9. Turn oven temperature up to 450.  Return wings to oven and cook for another 10-15 minutes.  I broiled mine for a minute on either side bc I like my wings crispy.  
  10. Serve with approved Ranch dressing and celery.
