Yai Yai’s Stuffed Pepper

This is a family favorite. A healthy twist on my hubby’s grandmother’s recipe. That lady could cook!

Ingredients

Instructions

  1. brown diced onion with seasonings
  2. wait until fragrant
  3. add ground beef and brown
  4. add riced cauliflower
  5. add tomato sauce
  6. cool down until it is sloppy joe consistency
  7. cut top off peppers
  8. preheat oven to 350 degrees
  9. fill each pepper with ground beef mixture
  10. bake peppers in dish with the chicken broth at the bottom of the pan
  11. bake for 40-60 minutes until the pepper is tender
